Resumo:The increasing world population and their changes in dietary habits leads to an increase in fish consumption that is currently around an annual consumption of 20kg per capita. In Portugal, annual fish consumption is much higher than the world average being situated at 56kg per capita. Nowadays, aquaculture accounts for half of all fish consumed in the world to satisfy the growing demand for fish. The sector represents the fastest growth of the last decades in animal production for human consumption and consequently, with high economic impact worldwide. The biggest issue in this sector is bacterial diseases easily spreadable in aquatic environments where there is a large number of animals in a small space. To combat this issue, which is responsible for high economic losses in this sector, antibiotics are administered, however when misused, can persist in edible tissues and cause allergic reactions in hypersensitive individuals, or being responsible for the dissemination of bacterial resistance. Regulatory agencies are responsible for establishing maximum residue limits for these compounds. In this study, 39 salmon (Salmo salar) samples from aquaculture were analyzed using UHPLC-ToF-MS and UHPLC-MS/MS analytical methodologies to detect and quantify the presence of 42 antibiotics belonging to 7 different classes. The analytical methods developed and optimized were validated according to regulation 657/2002 / EC and the absence of any of the compounds investigated in the real samples was verified.
